POTASSIUM METABISULPHITE is a great way to prevent the over-oxidation of must and wine. By adding POTASSIUM METABISULPHITE after the fermentation process, you can slow down the yeast. This gives the additional benefit in that more sugars can be added to sweeten the wine without restarting the fermentation process.
Due to its anti-oxidising properties, POTASSIUM METABISULPHITE can be added to some frozen foods to prevent browning that would otherwise occur.
